Step 1: Prep and Meat Marination

  1. Prepare Rice: Wash Basmati rice thoroughly and soak for 30 minutes.
  2. Make Barista: Thinly slice 1 large onion and fry until deeply golden brown and crisp. Set aside for layering/garnish.
  3. Marinate: In a bowl, combine the meat, whisked yogurt, ginger garlic paste, lemon juice, 1/2 of the fresh herbs, and 1 level Tablespoon of Aarog Biryani Masala. Mix well. Marinate for at least 1 hour (or up to 4 hours).

Step 2: Cooking the Rice (Par-Boiling)

  1. Bring a large pot of water to a rolling boil. Add 2 tsp of salt.
  2. Drain the soaked rice and add it to the boiling water. Cook until the rice is 70% done—it should still be firm and unbroken.

  1. In the same pot used for frying onions, sauté the remaining 2 sliced onions until light brown.
